Ingredients for 3 cupfuls of serving:
- 3 ripe diced mangos
- 1 jalapeno, seeded and minced
- 1/2 chopped cup red onion
- 1/4 chopped cup fresh cilantro,
- 1 chopped medium red bell pepper
- 1/4 cup lime juice, freshly squeezed
- a pinch of salt
Directions:
- Combine the diced mangoes, jalapeno, onion, cilantro and bell pepper in a bowl.
- Add the lime juice and mix.
- Season with salt.
- Let the mixture sit for at least 10 minutes
Honey mango smoothie
The preparation time is 10 minutes.
Ingredients:
- 1 cup chopped mango
- 1 cup fat-free milk

- 8 ounces rock shrimp, sliced in half lengthwise
- 8 ounces of red snapper filet, skinless, boneless, and cut into 1/2 pieces
- 1-14 ounces of hearts of palm, drained and sliced crosswise
- 6 roasted red peppers from a jar, finely chopped
- 1 and 1/2 cups chopped basil and cilantro
- 2 tablespoon extra-virgin olive oil
- Coarse sea salt to taste
Directions:
- Combine orange juice, lime juice, shallot and red pepper flakes in a large bowl.
- Add the shrimp and red snapper, and season with salt. Toss to combine.
- Let the mixture sit, tossing only occasionally within a period of 20 to 25 minutes.
- Add the mango, avocado, hearts of palm, red peppers, basil-cilantro blend, and oil to ceviche.
- Toss to coat.
